Lettuce Use Our Taco Leftovers

Talking to Matt yesterday, I suggested we make Taco Lettuce Wraps.  Nearing the end of the day it was clear that he had subliminally blocked out the word "lettuce" because he asked me if we had bought wraps (tortilla shells) at the store.  I'm assuming he was very disappointed when I broke the news that we were using lettuce as wraps.  All in all, it turned out very well and we were both very pleased with the outcome.

Taco Lettuce Wraps
1 1/2 cups of taco meat (made with 93% ground turkey)
1/2 head of lettuce, leaves pulled off for wrapping
1/2 cup chopped onion
1/4 cup chopped jalapeno
1/4 cup chopped cilantro
1/2 cup chopped red pepper or green pepper
1/4 cup salsa
1/4 cup cheddar cheese
hot sauce of choice

Heat up the taco meat and assemble your wraps!  You can add whatever toppings you like - in fact I had sauteed some mushrooms and jalapenos, with garlic powder, red wine, salt, and pepper the night before and we used that as an additional topping, which was fabulous!


We both devoured the lettuce wraps, and truth be told, they were just as good as the 130 calorie tortilla shells I found floating around in the pantry this morning.  We each had probably 5 wraps... that would have really stacked up the tortilla shell calories!  Glad we stuck with lettuce :)
