Leftover Chicken Turned Low-Cal Alfredo

In preparation for our week of the Dukan Diet, we made 2.5 lbs of chicken last Sunday.  I cut up the chicken into cubes and placed it in a dish, one with Italian Dressing and one with a Jerk Marinade.  That's a lot of chicken and truth be told, there is still some that needs tossing in the fridge (only a few cubes).  The Dukan Diet requires a lot of meat and a lot of prior planning if you want to execute it well.  I find the easiest way is to make massive amounts of meat at the beginning of the week so there is less to plan for the week.  The problem here is, like with anything else (lasagna comes to mind) when you have leftovers and have to eat them for days in a row, they can quickly become unappealing.  I think I got through one day before I had to mix it up and make something different and due to the fact that we have next to nothing in our fridge, I had to get creative...this included finishing off the cup or so of spinach taking up room with its large plastic container.

Faux Chicken Alfredo with Spinach


1 cup Chicken cut up (cooked)
1/2 cup Milk
1/2 cup White Wine (or Chicken Stock)
3 wedges Laughing Cow Cheese (I used swiss because that is what we had.)
2 tsp minced Garlic
1 tbsp Garlic Powder
1 tsp Salt
1 cup chopped Spinach
1/2 cup Parmesan
1 package Miracle Noodles

Saute garlic in an oil rubbed pan until golden.  Add wine, let cook for 20 seconds.  Add cheese wedges, break apart to mix in.  Add milk, garlic powder, salt, and 1/4 cup parmesan.  Let mixture thicken, add chicken and spinach.  Rinse noodles and warm for 30 seconds in the microwave.  Place chicken mixture on noodles and top with remaining parmesan cheese.  Alfredo without cream and without flour or butter!

It sometimes amazes me when experiments such as this work out to be delicious, because it is so far from what an alfredo recipe calls for.  Granted - it is not exactly like alfredo, but it sure is close and delicious on another level.  Sometimes knowing that what you're eating is guilt-free makes it taste that much better.  I like eating delicious food, without a doubt... with that said, you can make food without calorie-laden ingredients and have it come out tasting as if they're still there!  Sometimes it works out great, and sometimes you have to Just Keep Tasting to figure out what else you can add to make it not taste faux!
