Nothing in the Fridge for Breakfast Smoked Salmon Omelette

Saturday morning breakfast is often comprised of whatever leftovers are lurking around in the refrigerator that we aren't completely tired of or revamping whatever leftovers are in there to make them more appealing.  Matt's daily scrambled eggs are wonderful, but by the time the weekend comes, it is good to mix it up a bit.  This Saturday... there was next to nothing in the refrigerator, so it was off to the pantry to explore those options.  Before setting off on my morning run, with my stomach grumbling in protest, the wheels were already turning trying to come up with how I could use smoked salmon for breakfast (without putting it on crackers, bagels, or making a grilled cheese smoked salmon sandwich)... the bagels and sandwich were definitely out because we didn't have any bread or bagels.  Smoked salmon and eggs... but of course!  (And by eggs I mean chicken eggs, not the fish eggs that Matt enjoys with his scrambled chicken eggs every morning.)

Due to Dukan, the stoplight peppers in the veggie bin were starting to go to shrivel-land, and it seemed about time we incorporated a little bit of Vitamin C and antioxidants into our life anyways, so they got thrown into this massive mix of omelette stuffing.  I could barely flip the second side of the omelette over by the time I was done stuffing.

Smoked Salmon Omelette


1 cup Smoked Salmon (chopped)...and not lox - but the actual meaty stuff.
3 wedges Laughing Cow Cheese (swiss or of choice)
1 cup Red/Yellow Peppers (chopped)
1/2 cup Red Onion (chopped)
2 tsp Garlic Powder
1/2 tsp Dill
1 1/2 cup Egg Whites or eggs

Rub skillet with oil.  Add egg whites on high heat.  Let cook for 30 seconds, turn to medium.  Saute veggies in a separate pan.  Add 1 tsp garlic powder to eggs and 1 tsp garlic powder to veggies.  Add half the dill to veggies and half to eggs.  Salt/Pepper veggies and eggs as desired.  When eggs set up, turn the heat to low.  Add cheese and smoked salmon and top with veggie mix on half of the open faced omelette.  Cook until cheese melts.  Voila!  Smoked Salmon Omelette.  P.S. You may want to try to not brown your omelette as much as did... the cheese took forever to melt. 

You may not be a fan of fish that comes in a foil package that has an expiration date 4 years from now... I can understand how that may seem sketchy.  However, smoked salmon really is delicious.  A mixture of yogurt, lemon juice, dill, and garlic powder on top of a cracker, topped with smoked salmon is absolutely divine!

Just Keep Tasting...having that smoked salmon hanging around may be great when the world comes to an end and you find yourself locked in your basement with nothing to eat but smoked salmon, at which point you'd decide to break down and try it and then of course, you would fall in love with it... it would be better to try it now and then go ahead and stock up.  $10 at Big Lots.  That being said. I am not a big fan of lox...although I've given it several tries.  It's just too much like raw fish.
