Grandma's Fried Chicken and Taco Salad

Sunday Dinner.

My Grandma Dorothy makes Sunday Dinner EVERY Sunday, regardless of anything else.  Food is her way of showing her love.  When she was in the hospital after a heart attack, her biggest concern was getting home so that she could make pies for Thanksgiving dinner.  Today is Sunday and Matt and I went to eat.  She makes no less than 25 dishes, by herself, every Sunday.  Some of these dishes include fried chicken, mashed potatoes, yellow potatoes, mac n cheese, rice, green beans, gravy, chicken nuggets, beef roast with potatoes, carrots, onions... you get the idea.


After gorging on numerous dishes...we decided on a light dinner, which would also satisfy our long-standing craving for Mexican food.  Taco Salad.

P.S. We went to Food Lion and really wanted to buy tortilla shells... and after a momentary lapse realized we didn't need the extra calories and I threw them back on the shelf.

1/2 head of iceberg, shredded
1/2 pound of ground turkey (93%)
1/4 cup shredded cheddar cheese
2 tbsp. cilantro
1 tiny bag of Doritos, crushed
1 medium jalapeno, chopped
1 cup of red peppers, chopped
1/4 cup of taco seasoning
3 tbsp. of chili powder
3 tbsp. of onion powder
1/2 cup water

Chop lettuce, jalapeno, red pepper, cilantro.  Saute ground turkey, season with part of the taco seasoning, chili powder, onion powder and then when almost fully cooked, mix 1/2 cup water with the remaining seasoning and pour over turkey.

Layer lettuce, red pepper, jalapeno, cilantro, Doritos, cheddar cheese in a bowl.  Top with cooked turkey.  Mix.  Top with salsa and dressing of choice, which for us is vinegar.  Salt and pepper to taste!

A great Sunday - filled with great food!  Now... where's my ice cream?
