Squashing Out the Rest of Our Taco Leftovers

2.5 lbs of taco meat is a lot.  This will be the third meal we have created with it.  Tonight we used it for a side dish.  Cooking something that lasts several days is a definite time saver.  Dinner is usually on the table in less than twenty minutes... and you just can't beat that after working all day. 

In case it has not been obvious from the two previous recipes, we eat a low carb diet... mainly bordering on no carb.  We both feel better cutting carbs out.  Also, I recently read that America is addicted to processed carbohydrates and once you start eating them, your body craves them all the time.  They offer nearly no nutritional value and raise blood glucose.  A big pass on that.  Salad is a staple and almost no meal is complete without one in our house. 

Now... tonight we baked some chicken breasts that had been marinated in Italian dressing and frozen.  I used leftover spaghetti squash and taco meat to make a side dish.... Mexican Spaghetti Squash Casserole.

2 cups of cooked Spaghetti Squash
3/4 cup of taco meat
1 jalapeno, sliced or chopped
1/3 cup of shredded cheddar cheese (or enough for a covering layer)
1/4 cup salsa
2 tbsp onion, chopped (optional)
1 tbsp cilantro, chopped (optional)

Layer in order - Spaghetti Squash, Taco Meat, Jalapeno, Cheddar Cheese, Salsa, Onion, Cilantro.  Cook in microwave for 5 minutes or until heated through.


You could top with sour cream or hot sauce or whatever suits your fancy!  Taco Meat isn't just for tacos!

P.S. Started watching Hell on Wheels... AMC show.  The previews sucked us in.  We'll see how it goes.

  1. You could also use regular spaghetti for almost any recipe calling for Spaghetti Squash in the event that you dislike spaghetti squash or don't want to sell an arm or leg or both to buy one.
