Grill It Up in the Winter Salmon and Veggies

I love grilling in the winter.  For a few minutes you can pretend it's a beautiful summer day. 

That being said, it was nice day out, so we decided to take advantage of the fact that you could stand outside without bundling up by preparing a grilled dinner.

Smoky Balsamic Salmon


4 Salmon Fillets (2 for dinner, saved 2 for lunch later in the week)
1/2 cup Smoky Mustard (Robert Rothschild Farms preferably, or just a dijon mustard would work)
1/4 cup Balsamic Vinegar
1 tbsp Garlic Powder
1/2 tsp Splenda or Sugar
Red Pepper Flakes (optional, to taste)

Mix ingredients in a bowl and brush onto salmon.  I let it sit for approximately 10 minutes, then flipped and brushed the other side and let sit for another 10 minutes.  Spray both sides with cooking spray, and then spray your grill with cooking spray, as well, to prevent sticking.  We use a grill pan for fish.  Cook approximately 7 minutes, flip, cook another 4 minutes. That's a guess on the time (I like mine well done.)




Grilled vegetables are another instance where I will take whatever vegetables we have in the refrigerator and chop them up, throw them into a grill basket and season them with whatever I can find.  You can't go wrong mixing a bunch of vegetables together! 

Grilled Veggies with Mrs. Dash

1 Red Pepper
1 Orange/Yellow Pepper
1 Red Onion
5 Mushrooms
9 Asparagus stalks
Mrs. Dash Hamburger Seasoning
Garlic Powder, Salt, Pepper
Cooking Spray

Chop veggies to the size you prefer.  I like mine to stay kind of on the large side, so you can char them without them becoming mush.

Spray with cooking spray, season with Mrs. Dash, garlic powder, salt, pepper, mix together.  Spray more cooking spray.  Grill to they begin to char, approximately as long as you have the salmon on...10-15 minutes.


With Mrs. Dash, it's salt-free, a definite bonus because so many pre-mixed seasonings are full of salt.  Mrs. Dash allows you to salt as you go!  Just Keep Tasting until it's right!  Enjoy those days when the weather is warm and take advantage of a bit of summer fun by breaking out the grill!!
